Avocado Soup – Vegan, Light and Refreshing

The extremely nutritious avocado fruit is the basic ingredient in this delicious and very easy to prepare, cold avocado soup!
Avocados are nutritious fruits, very tasty, and easily adapted to many recipes. They can even replace butter, they are delicious dips, soups, juices, salads, spreads, and mousses.

You can bake them in the oven, or on the grill and they are perfect with both eggs and chocolate!

Try this light and refreshing avocado soup! It is healthy and nutritious, it is served all the time (even for breakfast), it is filling, it is easily prepared (in a minute) and it is delicious!

Recipe For Vegan Cold Avocado Soup

 

Preparation time: 10 minutes
Vegan, Gluten-free

Ingredients for 2 people

500 gr. ripe avocados
200 gr. yogurt (vegan, greek style)
5 tbsp. lime juice
14 mint leaves
Cayenne pepper
200-230 ml of water
1 ice cube
salt

For garnish

2 radishes, in small cubes
6 cherry tomatoes, in small cubes
1/2 green pepper, in small cubes
mint leaves

Method

Peel the avocados and put them in a blender with the yogurt, lime juice, and ice cube. Melt them well, add the mint, and mash until the mixture is smooth.

Slowly add the water, until it reaches the density you like. Be careful not to get too fluid!
Add salt and cayenne pepper, and mix well
Store in the refrigerator until served.

Serve in a bowl and garnish with the diced vegetables and mint leaves.
